A nice Gigabyte Brix ☹ . I don’t want to buy a 10th gen NUC – I’m waiting for 11th gen. In an emergency I can put a laptop into service.
What I may do on Monday is buy a 10th gen Intel NUC, 16GB RAM and put Windows server on it.

FWIW I run:
1, 2 and 3 are important so over the next week I’ll create these using Hyper-V so if I get a hardware crash I can restart the Hyper-V systems on other hardware, I have spare laptops which can run 1, 2, 3 with ease. This gives me time to get new hardware as needed.
I really want to see how good the 11th gen graphics is as I would like to retire my station PC (i7-4770) GTX 1070 and replace with something which chews up less electricity and doesn’t generate as much crap on VHF.

Simon, if you’re interested, I have a 6th gen i3 NUC in a Akasa fanless enclosure. No RAM or SSD. 12-19 VDC is the listed acceptable power range so it would be handy in a mobile or backup configuration. It would be shipped from the USA. Photo attached with top lid open.

11th Gen NUCs appear to be coming out soon. I saw this video a couple of days ago on an 11th Gen chip + discrete RTX 2060 graphics. https://www.youtube.com/watch?v=tX5xCQcHbPE and here's a formal review https://www.tweaktown.com/reviews/9777/intel-nuc-11-enthusiast-phantom-canyon-sff-pc/index.html It looks like this will be hitting the market soon, but I can't seem to find anyone selling it right now. Simon, I don't know how it is today,
but in my past life, I did some automation work in Breda,
Holland. I needed a replacement relay scanner card for a Keithly
I/O scanner. To get around the VAT, etc. of importing a working
card from the US, I had my US based company disassemble the card
into it's component pieces, i.e. PCB, case, etc., then stated on
the customs form that these were "component repair parts", not a
completed assembly. It that still an option for you?

And,
Two NUCs located, I forgot that I did indeed own two NUCs located nr Garner NC, 1 x Celeron, 1 x i5-7260U, both have NVMe memory and SSD. These were part of a project from a few years ago and will arrive here ‘soon’.
