Hey Simon,
By the way, I've used a little program called WAV joiner and it works combining the .WAV files. Unfortunately it maxes out at 2gb. I'm still on the hunt for a tool.

Yes – I have 2 RSP2s and can easily select one or the other, or both, on both V2 and V3.

You won’t believe how simple it was…in Skimmer I was selecting “ENABLE AUDIO OUTPUT.” This is the speaker icon at the top of the Skimmer window.

I got it working. The trick as I recall is to not set the output to the virtual cable- the interface does that automatically, so if you also send it to the virtual cable, it gets two copies. I think

I don't think the Doppler gets recorded. I noticed that when bird is in sight and Doppler is correct frequency you don't see it effect the frequency you're on SDRConsoles receiver.

Make sure to set the ppm of your dongle. Whatever that may be. But best way is from a time source and sync to that. Click Radio Configuration from Home tab to get to ppm settings.
